Cheese sauce is basically a sauce made with a combination of processed cheese and flavors. It has numerous uses in cooking and baking. However, in our Chickie and Pete’s cheese sauce recipe, I used only three cheap and readily available ingredients.

I bet Butter, Cheese, and Milk are already in your pantry. Old bay seasoning is an optional ingredient here. Let’s know the ingredients in detail:

White American Cheese: 

Want that restaurant-like richness in your crab fries cheese sauce? White American cheese is the key ingredient here. White American cheese is a processed cheese made with different types of cheese.

It has a nice salty, creamy flavor and melts easily. 40g of diced white American cheese is used in the recipe. 

Cheddar Cheese:

While you can make this cheese sauce with only White American cheese, I used Cheddar cheese for an extremely cheesy flavor. Cheddar cheese is a natural cheese that has a raw and sharp taste. Though it is relatively hard in texture, it melts easily when heated. 30g freshly shredded cheddar cheese makes our crab fries cheese sauce more uniform and crunchy texture.

Salted Butter:

The second ingredient is something that almost all of us have stored in our kitchen. Guess what? Yes, I’m talking about butter here. Butter is the kitchen-king that makes everything better, isn’t it? Butter is usually made from churned cream and used in baking, cooking, as a condiment, and whatnot! 70g of salted butter is used in the recipe.

Evaporated Milk:

Evaporated milk is an unsweetened version of condensed milk. It is used to add richness and creaminess to both sweet and at the same time savory recipes. 180g of evaporated milk works as a base for our crab fries cheese sauce.

How To Make Crab Fries Sauce:

If you’re also a cheese junkie like me, then you’ll use this cheese sauce in almost every recipe you make. From the base for a sandwich to a dip for your crackers. Today I’ll tell you how to make this perfect game-changing Chickie and Pete’s cheese sauce at home in some simple steps.

Step 1:

Put a small pot on the stove. Next, put the butter and melt it. Keep the flame low at this stage.

Step 2:

Once the butter is melted. Add the cheese. Melt the cheese at medium heat only. Keep whisking continuously. Whisk until the mixture is all thick and smooth. 

Step 3:

Add the evaporated milk to the melted butter and cheese. Medium heat only until it boils, still must whisk continuously. Cook it until the mixture is thickened to your preferred consistency. 

Step 4:

Turn off the heat and let it cool. Place in a plastic squeeze bottle for easy serving. Or you can serve it warm right away with your hot fries.

 Recipe Tips & Notes:

  • Confused about the right consistency? Dip a spoon into the sauce and bring it out, the cheese should cling to the spoon and slide off quickly.
  • Wondering about what to dip in? Serve this Chickie and Pete’s cheese sauce with crab fries, french fries, sauteed broccoli, pretzels, garlic bread, nachos, and whatnot!
  • You’ll be happy to know that you can store it in a dry, airtight container in the refrigerator for 5-6 days.
  • Also, you can store it in the freezer for 2-3  months. All you’ve to do is warm it in the microwave and serve. 
  • You can sprinkle some Old Bay seasoning into your Chickie and Pete’s cheese sauce for added flavor.
  • You can use unsalted butter in place of salted butter if you prefer.
  • Of course, you can use low-fat milk, but the fat content of milk is necessary to make the sauce extra creamy. 
  • Don’t skip the use of American cheese, unless you’ll miss the original taste of Chickie and Pete’s cheese sauce. 
  • The sauce will form a thin layer on the surface if left standing. Just gently stir it before use and it’ll be good to go.
  • If you want your cheese dip for french fries more flavorful, you can use hot sauce, paprika, garlic, oregano, etc.

Ingredients

  • 700 g Salted butter
  • 30 g Cheddar cheese
  • 40 g White American cheese
  • 180 g Evaporated milk

Instructions

  • Put the butter on the pot and melt it in low flame.
  • Next add both the diced and grated cheese. keep whisking until a smooth, nice melt.
  • Add evaporated milk and boil until the preferred thickness comes.
