Cento White Clam Sauce Recipe Ingredients :

Excited to know the ingredients? The sauce needs garlic, butter, one can clam with juice and a splash of some spices, reduce a bit, then add cheese. It sticks perfectly to the pasta, spaghetti, crusty baguette, or salad whatever you serve it with.

Simple, quick, easy, but good enough for when you don’t know what to serve for dinner.  Made with the ingredients mostly already available in your pantry, it’ll turn out to be inexpensive for you. Let’s know about the ingredients in details:

Butter :

Butter can add creaminess and richness to any sweet or savory dish. I used 70g of butter to form the base of the sauce.

Olive Oil :

Olive oil has a unique smell and flavor.  I used only 2 tablespoons in the recipe so that other flavors don’t get overpowered by the strength of olive oil.

Flour :

Flour is added to sauces or gravies to thicken them up. I used 1 tablespoon of white flour in the white clam sauce for the pasta recipe.

Garlic :

Garlic has a strong, pungent taste that complements sauces and savory dishes. As clam sauce must be garlicky, I used 3 tablespoons of freshly chopped garlic.

Canned chopped clams :

Clams are seafood that have a dense, fishy, salty flavor. Use of canned clams made this white clam sauce recipe super easy and inexpensive.  I used 200gm undrained chopped clams in the recipe.

Clam Juice :

As we all know, Clam juice is the broth derived from clams when steamed at low flame. I used ½ cup bottled clam juice to add a nice brininess to the sauce.

Parsley :

Parsley has a warm herbal note that goes well with sauces and seafood. ½ cup freshly chopped parsley brings freshness and color to the sauce.

Lemon Juice :

Lemon juice plays well with the savoriness of seafood and heat from the garlic. I used 1 tablespoon of lemon juice to balance the flavors.

Parmesan Cheese :

Parmesan cheese is the show-stopper ingredient that gives our white clam sauce a nice and rich flavor. I used ½ cup freshly grated parmesan cheese at the last step of the recipe.

Salt :

Clam juice and butter may be already salty, so only use salt if needed according to your taste.

Red Pepper Flakes :

Little spiciness from red pepper flakes can be a game-changer in any sauce recipe. I used ½ teaspoon of red pepper flakes to add a kick to the sauce.

How Do You Make White Clam Sauce?

Directions :

Step 1 :

Put a medium-sized pan on the stove. Melt butter in olive oil. Add garlic and saute in medium heat for 1 min or until fragrant.

Step 2 :

Put the flour and whisk continuously. Next, put all the ingredients one by one apart from chopped clams, parsley, and lemon juice. Keep stirring continuously on a low flame. Bring the liquid to a boil.

Step 3 :

Now, add chopped clams and parsley. Boil for another 3-5 minutes. The liquid will be reduced by 50% by now.

Add parmesan cheese and lemon juice. Give the cheese a nice melt. Turn off the flame when your desired thickness is reached. Your mouth-watering Cento white clam sauce is ready to get dipped in. Yummy!

How To Thicken White Clam Sauce?

  • Use 2 tablespoons of flour instead of one. This will make the sauce thicker.
  • Also, you can mix 1 tablespoon of cornstarch in ½ cup water and add it to the sauce for a thicker consistency.
  • And remember, the sauce will always get thicker when cooled down.

Do not cook the clams for more than 5 minutes. Otherwise, these will become rubbery.
Be careful while adding salt, as butter and canned clams contain salt.
You can make the sauce spicy by using extra red pepper flakes and freshly ground black pepper.
Add ½  cup of heavy whipped cream for a creamier version.
Do you like tomatoes in your spaghetti? You can use half a cup of tomato and a little fresh basil for added taste.
Wondering if the sauce can be stored? You can store it in the refrigerator for 3-5 days. Reheat on low flame. Add half a cup of fresh cream to loosen up if the sauce gets too thick.
