Prepared Yellow Mustard:
Today’s pork rub is a mustard-based clay rub. Prepared mustard means mustard seeds blended with salt, vinegar, and paprika. It is easily found in grocery stores.
Or you can make yourself at home. Mustard adds a kick to the flavor of savory recipes. I used ½ cup of prepared yellow mustard for intense flavor in our Georgia rub.
Black Pepper:
Black pepper is a common ingredient found in almost all rubs and seasonings. Apart from intensifying the savory flavor of pork, it helps to tenderize the meat. I used 1 tablespoon of coarse ground black pepper in the recipe.
Cumin Powder:
Cumin powder pairs very well with cayenne pepper. Combinedly they deliver a nice warming flavor that compliments grilled pork. 1 teaspoon of cumin powder is used in the recipe.
Brown Sugar:
Brown sugar tenderizes the pork and gives a nice caramel-like crust. It goes well with other spices used in pork rub. ½ cup of brown sugar would be enough for our Georgia clay rub recipe.
Paprika:
Paprika adds smokiness and gives a bright red color to the pulled pork rub. Use 2 tablespoons of paprika in the recipe.
Garlic & Onion Powder:

How To Make Rub For Pulled Pork?

Step 1:
Measure and gather all the ingredients in a mixing bowl. Combine them well with a fork. Even out the lumps if any. Add a little water if you find it difficult to make them into a clay-like texture.
Step 2:
Brush the pulled pork with Georgia clay rub. Apply a generous amount of rub. Coat very well from all sides.
How Long To Leave Rub On Pork?
Rubs are a blend of spices, herbs, salt, sugar, and sometimes olive oil, vinegar, etc that are rubbed directly into the meat before grilling. The moisture of the meat gets mixed up with the rub while grilling. It creates a smoky and crunchy exterior that keeps the natural flavor of the meat intact.
When you’re done coating the pork, wrap it in a plastic food wrap and refrigerate at least overnight. The longer you leave the pork marinated with rub, the juicier and more delicious the grilled pork turns out. I usually leave mine in the fridge for around 24 to 30 hours.

- 1/2 Cup Prepared Yellow Mustard
- 1 Tablespoon Black Pepper
- 1 Teaspoon Cumin
- 1/2 Cup Brown Sugar
- 2 Tablespoons Paprika
- 1 Teaspoon Garlic and Onion Powder
- 1 Tablespoon Cayenne Pepper
- 1 Tablespoon Salt
- 1 Teaspoon Black Sesame Seeds
Instructions
- Measure and combine all the ingredients in a bowl and mix very well. Add water if necessary. The texture will be clay-like.
