Note: Though you can use hot peppers to prepare the fermented pepper sauce, we are giving you a few options to choose according to your choice.

  • If you want to make the sauce red in color, you can take Red Serrano, Thai Chilies, Red Jalapeno, Cayenne, and Aleppo.
  • If you want a greenish color sauce, you can use Green Jalapeno, Poblano, and Green Serrano.
  • If you want spicy sauce like fiery, you can use the hottest hot pepper, the Ghost Pepper.
  1. Garlic – 4 cloves

  1. Salt – 2 ½ teaspoons

The third important ingredient is salt. Excess amounts of salty brine can kill good bacteria.  You need 2 – 3% brine to protect the probiotics. So, the amount of required salt is 14.4 grams. Perhaps, 2 ½ teaspoons of salt is enough for this sauce recipe.

However, we suggest using the salt to your taste. 

  1. Filtered Water – 2 cups

Filtered water is another important element for fermenting hot peppers. 2 cups of filtered water is enough to ferment 250 grams of hot peppers.

Note: However, you have to make sure that the amount of water is enough to immerse the peppers in the fermentation jar.

  1. White Vinegar – 4 tablespoons

White vinegar creates an acidic environment which helps to inhibit the spoilage of the sauce. Besides, if you want tanginess, we recommend using 4 tablespoons of vinegar for this recipe.

Step 1: Prepare the Hot Peppers & Garlic

Preparing the hot peppers & garlic is the first task. We are using 250 grams of Serrano peppers.

  • Wash the hot peppers properly. Then cut them from the middle portion. 

Note: If you want less spice, you can remove the seeds.

  • Peel the garlic, then wash nicely.

Step 2: Prepare 3% Brine

The second step is to prepare the brine with filtered water and salt. Sea salt is a great alternative.

  • Take a large bowl.
  • Put 2 cups of filtered water & 2 ½ teaspoons of salt.
  • Give a nice mix.

Step 3: Fermentation

  • Then add the brine into the jar.

  • You should check the odor and bubbles of the jar daily. (Cloudy brines are the symbol of safe and tasty ferment)
  • After 2 – 3 weeks, open the lid and strain the peppers and garlic.
  • Keep the brine in a bowl.

  • Blending the Peppers & Garlic

Blending is the only step of the fermented hot sauce preparation.

  • First, take a food processor or blender.
  • Put the fermented peppers, garlic, and ½ cup of brine in the blender jar.
  • Turn the switch on and blend for a few minutes until you get a smooth mixture.
  • Add ¼ cup of vinegar to the mixture. If you want to add other seasoning, put sugar and cumin powder.
