Ingredients You Need

  1. Heirloom tomatoes

Take 3 lbs. of very ripe red heirloom tomatoes. This is the base of this sauce. Blanch the tomatoes and blend them smoothly. 

  1. Olive Oil

Then take 2 tablespoons of olive oil. It will help to glaze the sauce and make the sauce flavorful.

  1. Yellow Onion

Yellow onion is very soft, and it caramelizes well, which is perfect for this recipe. Take one small, finely chopped yellow onion.

  1. Garlic

Garlic adds fragrance to the sauce. Mince 4 garlic cloves finely, and it’s ready to use in the sauce.

First, you need to blanch the tomatoes, which is going to give a smoother texture to the sauce. Score an ‘X’ on the bottom of each tomato. Then drop them into boiling water for 30 seconds. Then take a pair of tongs and transfer the tomatoes to an ice bath, then peel them easily by hand. 

Note: Blanching is a process that helps to preserve the color, and it kills surface bacteria. 

Step 2

In this step, we will chop the tomatoes and then blend them. That’s it. 

Step 3 

Now, pour the olive oil into a large saucepan or Dutch oven over medium heat. Then add chopped onions until they are translucent. It can take about 5 minutes. After that, stir the garlic and cook for another minute. 

Step 4

Now it’s time to add the blended tomatoes to the pot. Then season it with salt, pepper, and optional red pepper flakes. Now, leave it to simmer for about 45-60 minutes. 

Step 5 

After reducing and deepening in flavor, now it’s time to add basil and balsamic vinegar. 

Note: If you want the sauce rustic, leave it chunky, but for a smooth sauce, blend it in a blender.
