Kushio Ichinose, a cook and inventor, started Pepper Lunch in 1994. Basically, he wanted to serve tasty fast food without having to hire a cook. For this method, hot metal plates are used that have been cooked in an electromagnetic cooker to 500F (260C). On the plates are raw meat, veggies, and rice, which are cooked in front of the customer. The meat can be cooked just the way the customer wants it, to their exact specifications. You can mix the food with either the fancy honey brown sauce (Amakuchi) or garlic soy sauce (Karakuchi).

How to Make Pepper Lunch Brown Sauce Recipe

  • First, heat some oil in a pan. Then, add the garlic and onions. Slowly cook on low heat until the smell starts to come out.
  • Mix the ingredients together and cook them over low heat until the sauce gets thick and bubbly. Then add the honey, light soy sauce, and cornstarch slurry. Also, the onions should be mushed up.
  • You don’t have to, but you can mix it all together for a quick blitz.

  • Light soy sauce and garlic should be put in a pan and left to boil over low heat for about 5 minutes.
  • Add the cornstarch mix and the black pepper. As it cooks, it will get thicker and bubble up.

Tips 

1)An iron pan keeps the heat in and can be used even after the stove is off. This is the best way to cook the beef. But I don’t have four iron skillets, so for the rest of my family I have to use regular ones. Don’t worry—the regular pan only needs three to five more minutes on the heat to cook the beef and turn the rice crunchy.

2) The crunchy rice at the bottom is the best part. That extra minute or two is time well spent for me because I like the crunchy rice that comes from leaving the pan on the stove.

3)It’s not necessary to use beef. If you don’t want to eat meat, you can use fried tofu, eggplant, bright peppers, or zucchini instead.

4) Many individuals avoid using pork, or at least very thin slices of it. Rather, they use extremely thin, high-fat slices of tuna or salmon meat.

5) If you can’t locate incredibly thin and gorgeous sukiyaki meat at the shop, you can purchase a sirloin steak, freeze it to make it firm, and then cut it into very thin slices. Make sure it’s absolutely dry and hasn’t frozen before cooking.

6) You can still have the garlic-soy (Karakuchi sauce) and should use tamari instead of soy sauce if you must adhere to a gluten-free diet. However, since oyster sauce contains gluten, do not use the honey-soy sauce mixture. Remove the oyster sauce and stir in ¼ cup water and 1 teaspoon cornstarch if you truly want to alter the honey-soy sauce. Stir them into a slurry, then pour them into the honey-soy sauce and heat until it thickens and bubbles.

7) You can still eat the steak if you have diabetes; just replace the rice with some vegetables. Instead of adding honey to the honey soy blend, taste and adjust with another type of sugar.

How to Serve Pepper Lunch?

A cast iron pan or a hot plate would be the best ways to serve this food. Before adding the ingredients, make sure the pan is hot on the stove all the way through. Serve it right away too.

  • Combine all ingredients in a bowl and mix thoroughly
  • Put the sauce aside

Beef Pepper Rice

  • Heat up a cast iron skillet or any skillet with a bit of avocado oil to lightly coat the bottom of the pan. Set the heat to medium-high.
  • Sauté the onions for 2-3 minutes, or until they begin to soften.
  • After the onions have softened, carefully move them to the center of the skillet. Next, arrange the thinly sliced beef around the edges of the skillet. Allow the beef to rest for a few minutes before moving the onions to the outer edges of the skillet, next to the beef.
  • Now, place the rice in the center of the skillet where the indentation was made.
