Ingredients

  • 1/2 Pound Lard
  • 4 cups Vinegar
  • 1 Sweet onion
  • 1 Green bell pepper
  • 1 Teaspoon Seasoned salt
  • 1 Tablespoon Brown sugar
  • 1 Teaspoon Cumin
  • 1 Teaspoon White pepper powder
  • 1 Teaspoon Red pepper powder

Instructions

  • Cut the onion and bell pepper and put aside
  • Heat a saucepan in a gas stove and put the lard
  • Saute onion and bell pepper in the lard
  • Add seasoned salt and all the dry spices
  • Add 4 cups of vinegar
  • Lastly, add brown sugar
  • Boil for 5 minutes and then it’s ready to dip your mop

Notes

The Thickness
The T&T mop sauce must have an almost water-like liquid consistency. As you have to dip the mop itself in the sauce, a thicker consistency would not be convenient. 
Careful Use Of Salt
Be careful while adding salt to your Big T’s sauce. As we all know vinegar is a little tangy already, the use of excess salt would not be a good combination. 
The Strength
Vinegar has a very strong tangy taste. So, If the sauce seems too vinegary to you, you can add ⅓ cup of water with vinegar. But not more than that because more water will ruin the whole game. 
Quality Of White Pepper
The white pepper you use in your T&T mop sauce must be restaurant-grade. Otherwise, the taste won’t be authentic.
