- 1 Cup Ground Beef
- 2 Cups Beef Broth
- 2 Large Bell Peppers
- 1 Large Tomato, Diced
- 1 Tablespoon Diced Onion
- 1 Teaspoon Minced Garlic
- 3 Chopped Green Chilies
- 1 Tablespoon Tomato Sauce
- 1 Tablespoon Brown Sugar
- ½ Teaspoon Mustard Powder
- 1 Cup Shredded Cheddar Cheese
- 1 ½ Cup Cooked Rice
- 1 Teaspoon Oregano
- 1 Teaspoon Dried Basil
- 1 Teaspoon Dried Parsley
- 1 Tablespoon Butter
- Salt and Pepper To taste
Cook ground beef on butter for 15 minutes seasoned with salt, pepper, garlic, and onion
Next, add diced bell peppers and tomatoes and saute for 5 minutes
Now add tomato sauce, beef broth and all the remaining ingredients. Simmer for 15 minutes stirring occasionally. Cook rice separately if not cooked beforehand
Put rice on serving bowls. Pour soup on top. Garnish some grated cheese and fresh parsley. Enjoy it warm
