Ingredients

  • 1 Cup Ground Beef
  • 2 Cups Beef Broth
  • 2 Large Bell Peppers
  • 1 Large Tomato, Diced
  • 1 Tablespoon Diced Onion
  • 1 Teaspoon Minced Garlic
  • 3 Chopped Green Chilies
  • 1 Tablespoon Tomato Sauce
  • 1 Tablespoon Brown Sugar
  • ½ Teaspoon Mustard Powder
  • 1 Cup Shredded Cheddar Cheese
  • 1 ½ Cup Cooked Rice
  • 1 Teaspoon Oregano
  • 1 Teaspoon Dried Basil
  • 1 Teaspoon Dried Parsley
  • 1 Tablespoon Butter
  • Salt and Pepper To taste

Instructions

  • Cook ground beef on butter for 15 minutes seasoned with salt, pepper, garlic, and onion
  • Next, add diced bell peppers and tomatoes and saute for 5 minutes
  • Now add tomato sauce, beef broth and all the remaining ingredients. Simmer for 15 minutes stirring occasionally. Cook rice separately if not cooked beforehand
  • Put rice on serving bowls. Pour soup on top. Garnish some grated cheese and fresh parsley. Enjoy it warm
