Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Red Onion
  • 2-3 Cloves Garlic
  • 450 Grams Chorizo Sausages
  • 2 Tablespoons Tomato Paste
  • 1 Teaspoon Dried Oregano
  • ½ Teaspoon Dried Basil
  • ½ Teaspoon Chili Flakes
  • ½ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • 2 Cups Chicken Stock
  • Cups Tomato Puree
  • 320 Grams Dried Pasta
  • ¼ Cup Parmesan Cheese

Instructions

  • Add the chopped sausages, onion, and garlic to a heavy-based saucepan with hot olive oil over high heat
  • Sauté the sausages for 5 to 7 minutes, or until they are golden brown and the onions are soft
  • Add the tomato paste and stir until well combined
  • The tomato paste should start to darken in color and get aromatic after another minute of heating
  • Add the stock and tomato puree after lowering the heat to medium-low and adding the spices, salt, and pepper
  • Lastly, add the dried  pasta and place the lid on
  • Cook for approximately 15 minutes, tossing occasionally to keep the pasta from sticking, or until the pasta is cooked to your preferred consistency. Depending on the type of pasta chosen, the cooking time will change
  • To get the appropriate thickness, remove the lid and boil the sauce for a few more minutes
  • Before serving, take from the heat and add the parsley and parmesan, if using
