  • 1 Teaspoon Cumin
  • ½ Teaspoon Chili Powder
  • ½ Cup Shredded Cheese
  • Fresh Cilantro  A few pieces
  • Salt and pepper To taste

  • 4 Santa Fe Grande peppers Large-sized (roasted and diced)
  • 1 Cup Fresh or Frozen Corn Kernels
  • ½ Red Onion (diced)
  • ½ Cup Chopped Cilantro
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Lime Juice
  • Salt and Pepper To taste

  • Prepare the Santa Fe Grande pepper by cutting the top
  • Then, prepare the filling by combining the cooked black beans, quinoa, diced tomatoes, green onions, cumin, chili powder, salt, and pepper.
  • Stuff the filling into the pepper
  • If you want, spread some shredded cheese over the pepper
  • Then, cover the baking dish with foil paper and bake the pepper for 25 -30 minutes
