Ingredients

  • 2 Cups Egg Whites
  • 1 Cup Cottage Cheese
  • ½ Cup Monterey Jack Cheese Shredded
  • ½ Cup Feta Cheese Shredded
  • ½ Cup Red Bell Pepper
  • ½ Cup Spinach
  • 3 Tbsp Green Onion
  • 1 Tbsp Olive Oil
  • 1 Tsp Hot Sauce
  • ½ Tsp Salt
  • ¼ Tsp Black Pepper

Instructions

  • Set the oven's temperature to 350 degrees. Coat the muffin pan with cooking spray. To replicate the sous vide texture of egg bits, you can also put a small dish filled with water in the oven
  • Add 1 tablespoon of oil and sauté the green onion, spinach, and red bell pepper for 3–4 minutes. Remove to a small bowl and refrigerate
  • Egg whites, cottage cheese, feta cheese, Monterey Jack cheese, spicy sauce, salt, and pepper should all be combined in a mixing bowl
  • In an immersion blender, mix all ingredients together for 30 seconds. In a standard blender, blend on high for up to 30 seconds to combine
  • To the mixture, add the chilled vegetables
  • Pour the egg mixture into a muffin tin that is 1/2 to 3/4 full, and bake for 20 to 22 minutes, or until the eggs are cooked through
