Ingredients
  

  • 2 Cups Egg Whites
  • 1 Cup Cottage Cheese
  • ½ Cup Monterey Jack Cheese Shredded
  • ½ Cup Feta Cheese Shredded
  • ½ Cup Red Bell Pepper
  • ½ Cup Spinach
  • 3 Tbsp Green Onion
  • 1 Tbsp Olive Oil
  • 1 Tsp Hot Sauce
  • ½ Tsp Salt
  • ¼ Tsp Black Pepper

Method
 

  1. Set the oven's temperature to 350 degrees. Coat the muffin pan with cooking spray. To replicate the sous vide texture of egg bits, you can also put a small dish filled with water in the oven
  2. Add 1 tablespoon of oil and sauté the green onion, spinach, and red bell pepper for 3–4 minutes. Remove to a small bowl and refrigerate
  3. Egg whites, cottage cheese, feta cheese, Monterey Jack cheese, spicy sauce, salt, and pepper should all be combined in a mixing bowl
  4. In an immersion blender, mix all ingredients together for 30 seconds. In a standard blender, blend on high for up to 30 seconds to combine
  5. To the mixture, add the chilled vegetables
  6. Pour the egg mixture into a muffin tin that is 1/2 to 3/4 full, and bake for 20 to 22 minutes, or until the eggs are cooked through
