Then, season the pork fillet with salt, black pepper, and herbs.
Now, heat olive oil in a skillet over medium heat, and sear the pork on all sides for 6–8 minutes, until golden brown
After that, transfer the pork to an oven-safe tray or pan. Roast for 15–20 minutes.
Now, remove pork from the oven and let it rest for 5 minutes under foil.
Meanwhile, melt butter in a pan over medium heat. And add diced apples, brown sugar, and water or wine. Stir to combine.
Simmer apples for 10–15 minutes, stirring occasionally, until soft and slightly thickened.
Add a pinch of salt and adjust seasoning to taste.
