Ingredients
  

For the Pork Fillet
  • 1-1.5 Lbs Pork Tenderloin Trimmed and Patted Dry
  • 1 Tsp Olive Oil
  • Salt As per taste
  • Black Pepper As per taste
  • 1 Tsp Dried Thyme or Rosemary Optional
For the Apple Sauce
  • 3 Medium Ripe Apples Peeled and Diced
  • 1 Tbsp Butter
  • 1 Tbsp Brown Sugar Optional
  • 2-3 Tbsp Water or White Wine
  • A Pinch Salt
  • 1/2 Cup Chopped or Torn Fresh Basil Optional

Method
 

  1. First, preheat the oven to 400°F (200°C).
  2. Then, season the pork fillet with salt, black pepper, and herbs.
  3. Now, heat olive oil in a skillet over medium heat, and sear the pork on all sides for 6–8 minutes, until golden brown
  4. After that, transfer the pork to an oven-safe tray or pan. Roast for 15–20 minutes.
  5. Now, remove pork from the oven and let it rest for 5 minutes under foil.
  6. Meanwhile, melt butter in a pan over medium heat. And add diced apples, brown sugar, and water or wine. Stir to combine.
  7. Simmer apples for 10–15 minutes, stirring occasionally, until soft and slightly thickened.
  8. Add a pinch of salt and adjust seasoning to taste.
  9. Then serve.
