Ingredients

  • 12 Oz Cheese Tortellini
  • 2 Tbsp Olive oil
  • 3 Cloves Garlic Minced
  • 1/2 Cup Shallots or Onion Chopped
  • 2 Tbsp Tomato Paste
  • 1/4 Cup Vodka
  • 1/2 Cup Heavy Cream
  • 1 Cup Crushed Tomatoes
  • 1/2 Tsp Red Pepper Flakes
  • Salt and Black Pepper As per taste
  • 1/4 Cup Parmesan Cheese
  • Fresh Basil or Parsley For Garnish

Instructions

  • Start with boiling the tortellini as per the package instructions. Then set the pan of tortellini aside.
  • Take another pan. Heat olive oil there and sauté onion or shallots and garlic in it.
  • Add tomato paste and let them cook for 2 minutes.
  • Add vodka into the mixture and let it simmer for 2 to 3 minutes.
  • Then add crushed tomatoes, heavy cream, and red pepper flakes into the sauce. Stir everything well and let them simmer for another 10 minutes.
  • Add the cooked tortellini into the sauce and toss everything so they get coated with the sauce.
  • Lastly, add seasoning with some salt and black pepper and garnish with basil or parsley.
