Start with boiling the tortellini as per the package instructions. Then set the pan of tortellini aside.
Take another pan. Heat olive oil there and sauté onion or shallots and garlic in it.
Add tomato paste and let them cook for 2 minutes.
Add vodka into the mixture and let it simmer for 2 to 3 minutes.
Then add crushed tomatoes, heavy cream, and red pepper flakes into the sauce. Stir everything well and let them simmer for another 10 minutes.
Add the cooked tortellini into the sauce and toss everything so they get coated with the sauce.
Lastly, add seasoning with some salt and black pepper and garnish with basil or parsley.
