Ingredients

  • Cups Mayonnaise
  • ½ Teaspoon Lime Juice
  • 1 Teaspoon Ground Chipotle Powder
  • ½ Teaspoon Chili Powder
  • ¼ Teaspoon Paprika
  • ¼ Teaspoon Cumin
  • ¼ Teaspoon Garlic Powder

Instructions

  • Make the chipotle lime dip at least an hour before serving to enable the flavors to meld
  • Combine all of the ingredients in a small bowl and chill
  • Preheat the oven to 400 °F. Slice the sweet potatoes into elongated sticks and place them in a large Ziploc bag
  • Apply enough vegetable oil to lightly coat the potatoes, then seal the bag and gently toss to evenly spread the oil
  • Place the potatoes in an even layer on a baking pan. Bake for 35-45 minutes, turning periodically, until lightly browned
  • Remove the casserole from the oven and season with Kosher salt as desired
  • Accompany with the chipotle lime dip
