- 1½ Cups Mayonnaise
- ½ Teaspoon Lime Juice
- 1 Teaspoon Ground Chipotle Powder
- ½ Teaspoon Chili Powder
- ¼ Teaspoon Paprika
- ¼ Teaspoon Cumin
- ¼ Teaspoon Garlic Powder
Make the chipotle lime dip at least an hour before serving to enable the flavors to meld
Combine all of the ingredients in a small bowl and chill
Preheat the oven to 400 °F. Slice the sweet potatoes into elongated sticks and place them in a large Ziploc bag
Apply enough vegetable oil to lightly coat the potatoes, then seal the bag and gently toss to evenly spread the oil
Place the potatoes in an even layer on a baking pan. Bake for 35-45 minutes, turning periodically, until lightly browned
Remove the casserole from the oven and season with Kosher salt as desired
Accompany with the chipotle lime dip
