Method
- Optional: In a small saucepan, sauté diced jalapeño in a splash of oil for 2–3 minutes.
- Add all remaining ingredients to the pan. Whisk to combine.
- Bring to a low simmer. Cook for 15 minutes, stirring occasionally.
- Taste and adjust seasoning (vinegar, sugar, spice).
- Let cool, then bottle and refrigerate for up to 2 weeks.
