Ingredients

  • 2 Tablespoons Extra-Virgin Olive Oil
  • 1 Large Shallot
  • 3 Garlic Cloves
  • Red Pepper Flakes Pinch Of
  • 1 Tablespoon Calabrian Chili Pepper Paste
  • 1 Cup Canned Crushed Tomatoes
  • ½ Cup White Wine
  • 2 Tablespoons Unsalted Butter
  • 1 Pound Mussels
  • ½ Cup Red Wine Vinegar
  • 1 Bunch Parsley
  • Salt To Taste
  • Black Pepper To Taste

Instructions

  • After rinsing under cool water, carefully pat the mussels dry and set aside
  • In a deep pot, sauté shallots, garlic, and red pepper flakes until fragrant with a little olive oil
  • Salt and pepper enhance flavor
  • Let your pasted Calabrian chili peppers sweat
  • Next, add smashed tomatoes and simmer for a few minutes
  • Pour in wine, let it reduce for 2–3 minutes, then add melted butter
  • After the sauce is fully mixed and the butter is melted, add the mussels and swirl to coat evenly
  • Cover and cook the mussels for 5–6 minutes until they open
  • Stop cooking and remove the lid
  • Add minced parsley
  • Serve with crusty bread for dipping sauce and cracked pepper
