Ingredients
  

  • 2 Pounds Bone-In Chicken Thighs And Drumsticks
  • 2 Tablespoons Olive Oil
  • ¾ Cup White Vinegar
  • ¾ Cup Soy Sauce
  • 4 Cloves Garlic
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon Coarse Black Pepper
  • 2 Bay Leaves
  • ½ Onion
  • 2 Tablespoons Diced Green Onion

Method
 

  1. Whisk together ¾ cup soy sauce, ¾ cup white vinegar, 4 garlic cloves, 2 tablespoons brown sugar, 1 teaspoon coarse black pepper, and 2 bay leaves in a large bowl
  2. Chicken drumsticks and legs with bones should weigh two pounds
  3. Let them marinate for an hour
  4. Add 2 tablespoons of olive oil to a large pan over medium-high heat
  5. Remove the chicken from the marinade with tongs and place skin-side down on the pan
  6. Keep the marinade!
  7. Remove the chicken to a new plate after browning on both sides
  8. Simmer the chopped onion in the same pan until soft
  9. Reserve and add sauce to the pan
  10. Cook the sauce on medium-high until boiling
  11. Cook for 5 minutes until slightly thickened
  12. Return chicken and sauce to the pan
  13. Lower the heat, cover, and simmer for 30 minutes to tenderize the chicken
  14. Let the sauce cook down to half
  15. Get rid of bay leaves
  16. Apply sauce on chicken and top with green onions
  17. Place on rice!
