Whisk together ¾ cup soy sauce, ¾ cup white vinegar, 4 garlic cloves, 2 tablespoons brown sugar, 1 teaspoon coarse black pepper, and 2 bay leaves in a large bowl
Chicken drumsticks and legs with bones should weigh two pounds
Let them marinate for an hour
Add 2 tablespoons of olive oil to a large pan over medium-high heat
Remove the chicken from the marinade with tongs and place skin-side down on the pan
Keep the marinade!
Remove the chicken to a new plate after browning on both sides
Simmer the chopped onion in the same pan until soft
Reserve and add sauce to the pan
Cook the sauce on medium-high until boiling
Cook for 5 minutes until slightly thickened
Return chicken and sauce to the pan
Lower the heat, cover, and simmer for 30 minutes to tenderize the chicken
Let the sauce cook down to half
Get rid of bay leaves
Apply sauce on chicken and top with green onions
Place on rice!
