Ingredients

  • 2 Pounds Bone-In Chicken Thighs And Drumsticks
  • 2 Tablespoons Olive Oil
  • ¾ Cup White Vinegar
  • ¾ Cup Soy Sauce
  • 4 Cloves Garlic
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon Coarse Black Pepper
  • 2 Bay Leaves
  • ½ Onion
  • 2 Tablespoons Diced Green Onion

Instructions

  • Whisk together ¾ cup soy sauce, ¾ cup white vinegar, 4 garlic cloves, 2 tablespoons brown sugar, 1 teaspoon coarse black pepper, and 2 bay leaves in a large bowl
  • Chicken drumsticks and legs with bones should weigh two pounds
  • Let them marinate for an hour
  • Add 2 tablespoons of olive oil to a large pan over medium-high heat
  • Remove the chicken from the marinade with tongs and place skin-side down on the pan
  • Keep the marinade!
  • Remove the chicken to a new plate after browning on both sides
  • Simmer the chopped onion in the same pan until soft
  • Reserve and add sauce to the pan
  • Cook the sauce on medium-high until boiling
  • Cook for 5 minutes until slightly thickened
  • Return chicken and sauce to the pan
  • Lower the heat, cover, and simmer for 30 minutes to tenderize the chicken
  • Let the sauce cook down to half
  • Get rid of bay leaves
  • Apply sauce on chicken and top with green onions
  • Place on rice!
