Method
- Toast the sesame seeds lightly for 2 to 3 minutes or until they release a fragrance. Then grind the toasted sesame seeds in a food processor. (Skip it if you are using tahini.)
- Now, take a bowl, mix the paste with soy sauce, vinegar, mirin or honey, and dashi or water.
- Lastly, add the grated garlic and sesame oil.
- Taste and see if any adjustment is needed for sweetness and thickness.
- Store the sauce in the refrigerator in an airtight container.
