Method
- Preheat the oven to 375 degrees
- Cut tops off peppers and remove seeds and membranes
- Heat olive oil in a pan. Saute onion, corn, and garlic for 3 minutes
- Add cooked rice, salt, pepper, thyme, and grated cheese to the pan. Cook for 5 minutes until the cheese is well melted
- Stuff the purple peppers and transfer them to a large baking dish
- Bake for 30 minutes in the preheated oven
