- 5 Purple Bell Peppers, Seeds, and Membrane Removed
- 1 Cup Corn kernel
- 1 Cup Brown Rice, Cooked
- ½ Cup Red Onion, Minced
- 2 Garlic Cloves, Minced
- 1 Tablespoon Olive Oil
- ½ Cup Parmesan Cheese, Grated
Preheat the oven to 375 degrees
Cut tops off peppers and remove seeds and membranes
Heat olive oil in a pan. Saute onion, corn, and garlic for 3 minutes
Add cooked rice, salt, pepper, thyme, and grated cheese to the pan. Cook for 5 minutes until the cheese is well melted
Stuff the purple peppers and transfer them to a large baking dish
Bake for 30 minutes in the preheated oven
