Ingredients
  

  • 5 Purple Bell Peppers, Seeds, and Membrane Removed
  • 1 Cup Corn kernel
  • 1 Cup Brown Rice, Cooked
  • ½ Cup Red Onion, Minced
  • 2 Garlic Cloves, Minced
  • 1 Tablespoon Olive Oil
  • ½ Cup Parmesan Cheese, Grated

Method
 

  1. Preheat the oven to 375 degrees
  2. Cut tops off peppers and remove seeds and membranes
  3. Heat olive oil in a pan. Saute onion, corn, and garlic for 3 minutes
  4. Add cooked rice, salt, pepper, thyme, and grated cheese to the pan. Cook for 5 minutes until the cheese is well melted
  5. Stuff the purple peppers and transfer them to a large baking dish
  6. Bake for 30 minutes in the preheated oven
