Ingredients
  

  • 1 Carrot
  • 1 Onion
  • 2 Celery
  • 3 Cloves Garlic
  • 8 Ounce Pancetta
  • 1 Pound Ground Beef 80/20
  • 1 Pound Ground Pork
  • 1 Cup White Wine
  • 1/2 Ounce Crushed Tomatoes
  • ¼ Ounce Tomato Paste
  • 2 Cups Chicken Broth
  • 1 Cup Whole Milk
  • Salt  To Taste
  • Black Pepper To Taste

Method
 

  1. Put the garlic, celery, onion, and carrots into a food processor
  2. Continue until the object is sliced across
  3. Take care not to pulse it until it becomes mushy
  4.  Remove and place in a plate
  5. Place the pancetta in the food processor and pulse it until it resembles coarsely chopped vegetables
  6. Place the pancetta in a large skillet and cook over medium-high heat for 5 to 6 minutes, or until it starts to crisp
  7. Take out and put on a serving tray
  8. Cook and crush the meat and pork
  9. Cook, stirring, until cooked through
  10.  You may need to exert a little more effort because you want the crumbs to be rather little
  11. Add the pancetta, white wine, and veggies to the skillet. Allow it to slowly burn out
  12. Stir in the tomato paste, chicken broth, and crushed tomatoes
  13. Simmer on low for 2 hours to allow the flavors to infuse and the mixture to thicken
  14. Add the milk and seasonings during the last fifteen minutes of cooking
  15. Adjust seasonings to taste
