Put the garlic, celery, onion, and carrots into a food processor
Continue until the object is sliced across
Take care not to pulse it until it becomes mushy
Remove and place in a plate
Place the pancetta in the food processor and pulse it until it resembles coarsely chopped vegetables
Place the pancetta in a large skillet and cook over medium-high heat for 5 to 6 minutes, or until it starts to crisp
Take out and put on a serving tray
Cook and crush the meat and pork
Cook, stirring, until cooked through
You may need to exert a little more effort because you want the crumbs to be rather little
Add the pancetta, white wine, and veggies to the skillet. Allow it to slowly burn out
Stir in the tomato paste, chicken broth, and crushed tomatoes
Simmer on low for 2 hours to allow the flavors to infuse and the mixture to thicken
Add the milk and seasonings during the last fifteen minutes of cooking
Adjust seasonings to taste
