Ingredients

  • 1 Carrot
  • 1 Onion
  • 2 Celery
  • 3 Cloves Garlic
  • 8 Ounce Pancetta
  • 1 Pound Ground Beef 80/20
  • 1 Pound Ground Pork
  • 1 Cup White Wine
  • 1/2 Ounce Crushed Tomatoes
  • ¼ Ounce Tomato Paste
  • 2 Cups Chicken Broth
  • 1 Cup Whole Milk
  • Salt  To Taste
  • Black Pepper To Taste

Instructions

  • Put the garlic, celery, onion, and carrots into a food processor
  • Continue until the object is sliced across
  • Take care not to pulse it until it becomes mushy
  •  Remove and place in a plate
  • Place the pancetta in the food processor and pulse it until it resembles coarsely chopped vegetables
  • Place the pancetta in a large skillet and cook over medium-high heat for 5 to 6 minutes, or until it starts to crisp
  • Take out and put on a serving tray
  • Cook and crush the meat and pork
  • Cook, stirring, until cooked through
  •  You may need to exert a little more effort because you want the crumbs to be rather little
  • Add the pancetta, white wine, and veggies to the skillet. Allow it to slowly burn out
  • Stir in the tomato paste, chicken broth, and crushed tomatoes
  • Simmer on low for 2 hours to allow the flavors to infuse and the mixture to thicken
  • Add the milk and seasonings during the last fifteen minutes of cooking
  • Adjust seasonings to taste
