- Toast the dried chiles lightly in a dry pan.
- Soak the toasted chiles in hot water for 10–15 minutes.
- Sauté garlic, onion, and tomato (if using) until soft.
- Blend soaked chiles, sautéed veggies, vinegar, salt, and water until smooth.
- Strain the sauce for a smoother texture (optional).
- Stir in lime juice and adjust seasoning to taste.
- Store in a clean jar in the fridge for up to 3 weeks.
